A crookie is the viral Parisian mash-up between a buttery croissant and a chunky cookie dough, originally created at Boulangerie Louvard in Paris. The ube crookie is our purple twist: an all-butter croissant is sliced open and stuffed with a raw ube and white chocolate chip cookie dough made with real Ube Nolia ube powder, then quickly baked so the outside stays flaky while the inside turns into a warm, gooey, deep purple cookie center.

The crookie was invented in 2022 by Stephane Louvard at Boulangerie Louvard in Paris and went viral on TikTok in 2024. Our ube crookie recipe keeps the same idea (croissant + cookie dough) but adds real Filipino ube powder and white chocolate chips for a deep purple, subtly hazelnut-vanilla flavor.

Which croissants work best for ube crookies?

Use good-quality, all-butter bakery croissants that are one day old. Fresh croissants are too soft to stuff cleanly, while day-old croissants firm up slightly and hold the cookie dough perfectly. Avoid mini croissants or filled croissants (almond, chocolate) as they leave no room for the ube cookie dough.

Which cookie dough should I use for the ube crookie?

We use our own ube white chocolate chip cookie dough, exactly the same recipe as our Ube White Chocolate Cookies (muscovado sugar, real Ube Nolia ube powder, chopped white chocolate). It gives the deepest purple color, a fudgy texture, and the signature hazelnut-vanilla ube flavor. Half a batch is enough for 6 crookies.

What croissants work best for a crookie?

Store-bought, all-butter bakery croissants from a real boulangerie (croissant au beurre). Look for a deeply golden, flaky, buttery croissant, not a supermarket brioche-style one. Day-old croissants crisp up beautifully in the oven.

Do I need to bake the ube crookie?
