    1. Growing: The Right Soil and Climate

    Great ube needs three things: tropical heat, well-drained soil, and time. Our partner farms in Pangasinan benefit from year-round warmth and volcanic soil rich in minerals. This environment produces roots with deep purple flesh and a naturally high anthocyanin content.

    We select varieties known for culinary quality, not just yield. This means the ube is sweet, aromatic, and stable in color after drying.

    2. Harvesting: Hand-Selected at Peak Maturity

    Ube is harvested when the vines begin to dry, a sign that the starches and sugars have concentrated in the tuber. Farmers hand-select roots for size, color, and firmness. Damaged or immature roots are removed before processing.

    Each harvest is logged with a batch number, farm location, and harvest date. This is the first step in our traceability system.

    3. Processing: Steam, Dry, Micronize

    Within days of harvest, the ube is washed, steamed until tender, sliced, and dried at low temperature. Low-temperature drying preserves the natural anthocyanins and prevents the burnt or caramelized off-notes that come from high-heat processing.

    The dried slices are then micronized into a fine powder. This fine particle size is what makes UBE NOLIA® powder dissolve smoothly in milk without clumping.

    4. Testing: Quality Before Every Batch

    Before packing, every batch is tested for:

    • Moisture content — to ensure shelf stability
    • Microbiology — total plate count, yeast, mold, and pathogens
    • Color stability — to confirm the powder stays purple after mixing or baking
    • Solubility — to guarantee smooth texture in drinks and creams

    Results are recorded in a Certificate of Analysis (COA) and Technical Data Sheet (TDS) for each batch.

    5. Packing & Shipping from the EU

    The finished powder is packed in food-grade pouches in our EU facility. We ship from our EU warehouse, which means fast delivery for EU and UK customers and no unexpected customs fees.

    Pouches are sealed with a best-before date and batch code. We recommend storing ube powder in a cool, dry place away from direct sunlight.
